Happy Thanksgiving

have a wonderful break! i don't know about you, but i'm so stoked for this time away. i'll be praying for each of you, that you get the rest you need and come back refreshed and ready for the final weeks of school...2 weeks and finals!!!

Thanksgiving Dinner

MONDAY...TONIGHT at 6:30pm my apartment!

bring your roommates and your yummy dish as we celebrate Thanksgiving together!

it is not to late you say you want to come, so just show up!! i can't wait to see you all there!

Pumpkin Pie

INGREDIENTS
1 cup canned pumpkin (not pumpkin pie mix)
1/2 cup Original Bisquick® mix
1/2 cup sugar
1 cup evaporated milk
1 tablespoon butter or margarine, softened
1 1/2 teaspoons pumpkin pie spice
1 teaspoon vanilla
2 eggs
Whipped topping, if desired
DIRECTIONS
Heat oven to 350 degrees F. Grease 9-inch pie plate.
Stir all ingredients except whipped topping until blended. Pour into pie plate.
Bake 35 to 40 minutes or until knife inserted in center comes out clean. Cool 30 minutes. Refrigerate about 3 hours or until chilled. Serve with whipped topping. Store covered in refrigerator.

Thanksgiving Dinner

Homecoming Week

Monday 17th- Midnight Madness 9pm in Golden Gymnasium
there will be craziness, competition, and fun while you get to know the basketball teams and kick off the season with them. come to support our very own Alicen!

Wednesday 19th- Powderpuff Game 6pm
Nikki Romani and our other amazing woman will be showing us their amazing skill, which is may i say far better than our guy's football team. :) i personally want to see the guys cheerlead for the half time show!

Friday 21st- Variety Show 8pm in Brown Chapel

Saturday 22nd- Homecoming Game 5:30pm in Golden Gymnasium
this is always a big hit. lets go and show Trevecca who will be victorious, but leave the TP at home! tickets are on sale for $2 at the info booth all week. don't forget to pick up your T-shirt too!

the Golden Door in Escondido Ca

this ladies is the spa of all spas! this is consistently rated the as the best among the finest spas in the land. the Golden Door has 344 acres to accommodate only 40 guests and is designed in a Japanese style with meticulously trimmed greenery, meditative sand gardens, and koi ponds. Guests, women only, spend most of their time outdoors communing with nature while blissfully tuning out during their week stay. all accommodations in the rustic Japanese inn are serene and single occupancy to honor personal space. there are four staff members to every guest to ensure serious pampering. your day consists of breakfast in bed, a personal trainer, sunrise hike, massage, and amazing cuisine. I'll leave out the price....but maybe if your mom comes to visit, you two should look into this!

Butternut Squash Bisque

INGREDIENTS
1 tablespoon canola oil
1 tablespoon unsalted butter
1/2 cup diced onion
3/4 cup diced carrots
4 cups peeled and cubed butternut squash
3 cups vegetable stock
salt and ground black pepper to taste
ground nutmeg to taste
1/2 cup heavy cream (optional)
DIRECTIONS
Heat the oil and melt the butter in a large pot over medium heat. Cook and stir the onion in the butter and oil under tender.
Mix the carrots and squash into the pot. Pour in vegetable stock, and season with salt, pepper, and nutmeg. Bring to a boil, reduce heat, and simmer until vegetables are tender.
In a blender or food processor, puree the soup mixture until smooth. Return to the pot, and stir in the heavy cream. Heat through, but do not boil. Serve warm with a dash of nutmeg.

Thanksgiving Dinner

let's do a progressive Thanksgiving dinner! talk it over with your apartment and email me the course or item you guys want to provide! we will for sure need pumpkin pie and crescent rolls! this is only two weeks away so let me know ASAP what you want to share with the rest of the building! yummm, i love Thanksgiving and can't wait to do this!

Rock for Reynolds

this is probably the most significant event that will take place on campus all semester if not year!! this Friday in the Rec Room at 7:30pm is a Benefit Concert. all the proceeds go to support the nursing students in Washim, India. this is where half our building went this summer on our nursing love works trip. it would be awesome if we could pack that place out and support our sisters in Washim! it is only $10 a month for 1 month's tuition and room and board for their nursing school. imagine how much we could do for them just by going to a concert!

BIG Soft Ginger Cookies

INGREDIENTS
2 1/4 cups all-purpose flour
2 teaspoons ground ginger
1 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
3/4 cup margarine, softened
1 cup white sugar
1 egg
1 tablespoon water
1/4 cup molasses
2 tablespoons white sugar

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Sift together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.
In a large bowl, cream together the margarine and 1 cup sugar until light and fluffy. Beat in the egg, then stir in the water and molasses. Gradually stir the sifted ingredients into the molasses mixture. Shape dough into walnut sized balls, and roll them in the remaining 2 tablespoons of sugar. Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly.
Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an airtight container.

Cheese Ravioli with Pumpkin Sage Sauce

INGREDIENTS
1/2 cup dry white wine
1/4 cup chopped shallots
1 (10 ounce) container BUITONI® Refrigerated Alfredo Sauce
1/2 cup LIBBY'S® 100% Pure Pumpkin
1 tablespoon chopped fresh sage
2 (9 ounce) packages BUITONI® Refrigerated Four Cheese Ravioli
2 tablespoons chopped green onion

DIRECTIONS
Cook wine and shallots in medium saucepan over medium heat, stirring occasionally, until reduced to about 1 tablespoon. Stir in sauce, pumpkin and sage. Cook, stirring occasionally, until heated through.
Prepare pasta according to package directions; drain, reserving cup cooking water. Stir reserved water into sauce; toss with pasta. Sprinkle with green onion. Season with ground black pepper.
